Tahini Dressing

Serves: 2 cups

Ingredients:
2 cloves garlic, minced
1/2 cup fresh parsley (optional)
2 tablespoons fresh lemon juice
1/2 cup filtered water
1/2 cup tahini (get this in a health foods store)
1/2 teaspoon sea salt (optional)
1/2 cup fresh cilantro
3 tablespoons fresh ginger

Directions: Blend in high speed blender until smooth.

Maureen's note: I met Piers and Sheryl of www.raw-pleasure.com when I was volunteering as part of the support crew at a Tony Robbins seminar in Australia. Piers and Sheryl catered the food for the crew for the entire week and we were introduced to the most fabulous raw food recipes. I especially loved this dressing - it really adds zip to salads!
